Tomatoes and bocconcini with basil Ingredients 1/4 cup olive oil 2 tsp freshly chopped mint 2 Tsp fresh basil 2 tsp lemon juice 2 tsp balsamic vinegar 4 bocconcini 2 large tomatoes dressing: 3/4 cup olive oil 2 tsp freshly chopped mint 1/4 cup fresh basil 3 tsp lemon juice Directions Blend together dressing ingredients. Store in refrigerator until needed. Blend oil, mint, basil, lemon juice and balsamic vinegar until a smooth paste is formed. Pour over the bocconcini, cover and marinate overnight. When bocconcini is ready, slice tomatoes into 1/2cm slices. Place single layer of tomato slices on serving dish. Remove bocconcini from marinade, discarding marinade. Slice into slices of similar thickness and lay on top of tomato slices. Pour dressing over slices.
