Spinach and Mushroom Salad Ingredients 1 clove garlic 1 1/2 lb fresh spinach 1/2 lb mushrooms, sliced 6 slices crisp cooked bacon, crumbled 3 hard-cooked eggs, finely chopped Croutons made of 4-6 slices French bread, buttered, cubed and baked Dressing: 1/2 C olive oil 1/2 C salad oil 1/2 C white tarragon vinegar 1/2 t dried tarragon 1 t sugar 1/2 t Dijon mustard Salt and freshly ground black pepper to taste Directions Rub a wooden salad bowl with garlic. Trim and discard tough spinach stems, rinse leaves well, pat dry, and break into bite-size pieces. Place spinach, mushrooms, bacon eggs, and croutons in the bowl. Toss with dressing. Dressing: combine all ingredients and set aside for at least 24 hrs.
